What is Kuma Shochu?
Japan’s Traditional Rice Spirit from Kumamoto
Japan is widely known for sake, but another traditional spirit has been enjoyed for centuries: shochu. Among the many types of shochu, Kuma Shochu is one of the most distinctive and historically significant.
Produced exclusively in the Kuma region of Kumamoto Prefecture, Kuma Shochu represents more than 500 years of distillation tradition and is recognized as a Geographical Indication (GI) spirit.
A Spirit with Over 500 Years of History
Kuma Shochu has been produced in the Hitoyoshi–Kuma region of southern Kumamoto for over five centuries. Surrounded by mountains and blessed with clean water from the Kuma River, this region has long been ideal for producing high-quality rice and spirits.
Today, 27 distilleries continue this tradition, each maintaining its own techniques while preserving the heritage of Kuma Shochu.
Because of its historical and cultural significance, Kuma Shochu is protected under Japan’s Geographical Indication (GI) system, meaning authentic Kuma Shochu can only be produced in this specific region.
What Makes Kuma Shochu Unique?
Kuma Shochu has several defining characteristics:
Made from Rice
Unlike many other types of shochu that use barley or sweet potatoes, Kuma Shochu is made primarily from rice, giving it a smooth and refined character.
Traditional Koji Fermentation
Kuma Shochu uses koji mold, a traditional Japanese fermentation culture that enhances aroma and complexity.
Pot Distillation
Most Kuma Shochu is distilled using traditional pot stills, which preserve the flavor and character of the ingredients.
Regional Identity
The combination of local rice, pure water, and centuries-old craftsmanship creates a spirit that reflects the culture of the Kuma region.
